ABV: 5.3%, IBU: 36. Grain to glass time: 10 days. Ghost Wheat is an easy drinking American Wheat Ale, with soft notes all around. 45% Wheat malt, 45% 2-Row malt, and 10% Vienna malt. All the malts are base malts and contribute to the fermentable sugars. The Wheat brings the soft haze to the body and the 2-Row balances the Wheat, preventing it from being too gummy. The Vienna adds a baked bread character that adds a hint of complexity. The hops are American varieties of Simcoe and Amarillo. In larger quantities these go nicely into Pale Ales and IPAs, but we keep the levels low to give notes of lemon and citrus and just enough bitterness to balance out the malt body. This beer is fermented with US-05, which is a Chico strain from California. It ferments clean and leaves a lingering haze for the first 2 weeks after fermentation and a noticeable peach ester. The grain to glass time is approximately 10 days. Once the beer is fully carbonated in the tap, it’s best to wait between 3 and 7 days for the beer to mature. After that first week in the tap, this beer hits it’s prime!
