8.3% ABV, 40 IBU. Grain to glass time: 9 days. This Belgian Tripel is constructed in the same Trappist style as the famous monastery brews from Belgium. The grain profile is light and aromatic. Rock candi sugar (add to the waste bag while setting up the brew) dry this big beer out while giving the yeast more fuel to produce their quintessential bubblegum and juicy fruit flavors. The coriander (add with the grains) provides a fresh bouquet of aromatics. The hops are subdued and take a back seat to this grain, spice, and yeast spectacle.
